  5. The pulp of the fruit contains a large amount of a jelly-forming substance - pectin. To improve the juice waste, you need to use a special drug called pectinase. It can be purchased from specialized stores. In his absence, you will have to be content with what you managed to push.
  6. A large amount of pectins greatly lengthens the time clarification of wine.

  3. Add 1/2 the amount of sugar and unwashed raisins.
  4. Pour the juice with the pulp into the jars, filling them 2/3 full.
  5. Close the necks of the bottles with gauze, remove to a warm place. Shake and shake the contents daily.
  6. After a few days, the pulp will separate from the juice and float up together with the foam. The juice will give off a sour smell.
  7. Collect the pulp, squeeze and discard. Add the remaining half of the sugar to the juice, stirring it until it is completely dissolved.
  8. Pour the finished wort into clean jars, filling them no more than ¾. Place containers under a water seal or put a medical glove on the neck, piercing the little finger with a needle.
  9. Leave the wort in a warm place until complete fermentation. This may take 30-60 days.
  10. After clarification, the wine is drained without disturbing the sediment. Then it can be poured into clean bottles, well closed. Move to basement or subfloor for maturation, this can take up to 2-3 months.
Important! There is no need to use plastic containers for making wine.

Homemade cherry plum wine: a simple recipe

Any sort of cherry plum will do. The recipe requires a minimum of components, the wine is made quite simply.

  3. Pour the resulting fruit puree into the jars, filling them 2/3 full.

  5. After 3-4 days strain the wort, squeeze the pulp. Add sugar at the rate of 100 gr. for every liter.
  6. Place cans under a water seal or wear a glove.
  7. Remove to a warm place.
  8. After 5 days, add the same amount of sugar again, stir until dissolved. Place under a water seal.
  9. After 5-6 days, add the remaining sugar. Place under the water seal. The wort should be fully fermented in 50 days.
Important! If, after 50 days, bubbles continue to stand out, the wine is drained using a tube and left under a water seal for fermentation, otherwise it will taste bitter.

Then the drink must be slowly decanted from the sediment, bottled and placed in a dark, cold place for ripening for 3 months.

Important! Fill the container with wine under the neck and close the cork tightly so that contact with air is minimal.
