How to cook "Pyatiminutka" jam from pitted cherries

The pitted cherry dessert is very popular and can be prepared according to any recipe. The main thing is that the berries in the finished product retain their integrity, and the jam does not turn out to be a shapeless mass. Harvesting for the winter is made only from high-quality raw materials and over low heat.

Often the fruit is damaged by pests. In appearance, the surface may be without signs of violation, and the flesh may be spoiled. Before processing, the fruits are placed in slightly salted water with the addition of citric acid or vinegar. Leave in solution for 10-15 minutes. The procedure will not affect the taste of the dessert, and the pests will leave the berry.

Cherry is taken only ripe, without mechanical damage, so that there are no rotten areas. Drupe is well washed and scattered in a thin layer on a fabric surface. Leave until moisture evaporates. For "Pyatiminutka" cherries are used without pits.

They are removed with a special device or improvised means: a pin, a hairpin, a cocktail tube. The main task is to minimize damage to the pulp and preserve the juice. Before discarding the seeds, they are boiled for 30-40 minutes in a small volume of water. The resulting broth is added to the finished dessert to add flavor.

To make jam, use aluminum, tin or copper dishes. An enamel container is not suitable, since even with thorough mixing there is a risk that the mass will burn to the bottom and the taste of the product will be spoiled. Wide dishes with high edges are preferred. The workpiece should not occupy more than half the volume of the container.

When the jam boils, foam rises on the surface. If the saucepan is not deep enough, foam can get on the outside of the container and on the stove. During the preparation process, the foam is completely removed as it appears. It is she who is the reason for the fermentation of the jam.

Important! Before laying the finished jam, the jars are washed with baking soda, then with a detergent and sterilized along with the lids.
