Spicy beets can be made from raw or boiled vegetables. The cutting shape can also be absolutely any. Any varieties are suitable for this preparation, the main thing is to make sure that the vegetable is completely ripe, has a uniform intense color without light spots or streaks on the pulp.

You can boil the beets until they are fully cooked - the vegetable becomes so soft that it is easy to pierce it with a fork. So until half cooked - in this case, the roots are blanched in boiling water for 10 to 20 minutes. Most often this is done in order to remove the skin with the least effort. After such blanching, it can be removed quickly and easily.

There are recipes for making hot beets for the winter, where the sterilization process is used, and, despite this, everything turns out very tasty. In such recipes, vegetables usually undergo minimal heat treatment. If the beets are pre-boiled until tender, then sterilization is usually not needed.

The classic recipe for hot beets for the winter

This recipe is the most popular among housewives, probably due to its rich composition and good storage in winter. But beets play a major role here anyway.

You will need:

  • 2 kg of sweet beets;
  • 1.5 kg of tomatoes;
  • 5-6 pieces of sweet Bulgarian pepper;
  • 3-4 pieces of red bitter pepper;
  • 7 cloves of garlic;
  • 30 g salt;
  • 100-120 ml of vegetable oil;
  • about 2/3 tsp. vinegar essence.
Advice! If the beets are not very sweet, then you can add 50 g of sugar.

Preparation:

  1. All vegetables are washed and cleaned of all unnecessary parts.
  2. Peeled beets are cut into strips or grated for Korean carrots.
  3. Stew it over medium heat in a skillet with butter for about 20 minutes.
  4. Tomatoes are scrolled through a meat grinder, pepper is also cut into strips.
  5. After 20 minutes, add chopped tomatoes to the pan and stew for another 20-30 minutes.
  6. Then add both types of peppers and heat the vegetable mixture for another quarter of an hour.
  7. Finely chopped garlic is added last and after 5 minutes the heat is turned off.
    Attention! Vinegar essence can be added either at the last minute of cooking to the total vegetable mass, or literally drop by drop into each 0.5 liter jar before rolling.
  8. When hot, a spicy beetroot snack is laid out in sterilized jars and rolled up for the winter.

Spicy appetizer for the winter from beets with garlic and chili

This recipe for hot beets for the winter is very simple in itself, although it requires additional sterilization, since it does not use vinegar at all. But it will certainly be appreciated by representatives of the strong half of humanity.

Would need:

  • 1 kg of beets;
  • 1 chilli pod
  • 1 liter of water;
  • 2 bay leaves;
  • a bunch of parsley or dill;
  • 6 cloves of garlic;
  • 0.5 tsp ground coriander;
  • 15 g salt;
  • 15 g sugar;
  • a pinch of cumin and saffron.

Manufacturing:

  1. Root vegetables are thoroughly washed, dipped together with the peel in boiling water and blanched for 18-20 minutes.
  2. They are removed from the boiling water and immediately immersed in as cold water as possible.
  3. Peel from the peel, which is easily removed by itself after such a procedure, and cut into thin circles or cubes.
  4. At the same time, the marinade is prepared. Dissolve the sugar and salt in a saucepan of hot water. After boiling, add all the spices, boil for 5 minutes and leave it under a closed lid to infuse until it cools.
  5. Beets are laid out in clean and dry jars along with chopped garlic, pepper and herbs, poured with infused marinade.

You will need:

  • 500 g of boiled and peeled beets;
  • 500 g baked and peeled eggplants;
  • 500 g cored apples;
  • 2-3 pods of hot pepper;
  • 5 cloves of garlic;
  • 30 g salt;
  • 75 g sugar;
  • 180 g of vegetable oil.

Preparation:

  1. Boil the beets in their skins until cooked (the flesh should be easily pierced with a fork) for about 1 hour.
  2. Eggplants are baked in the oven at a temperature of about + 180 ° C until soft within 30-40 minutes.
    Important! If there is enough space in the oven, the beets can also be baked in the peel along with the eggplant.
  3. Boiled or baked vegetables are peeled and chopped using a grater or meat grinder.
  4. Apples and peppers are freed from the pith with seeds, garlic is peeled from the husk.
  5. All ingredients are also crushed using a meat grinder.
  6. Mix all the products in one saucepan, add salt and sugar, stir and insist in the heat for about an hour.
  7. Then add vegetable oil, put the mass on fire and heat over low heat for about 20-30 minutes under the lid and another 5 minutes with the lid open.

You will need:

  • 800 g of beets;
  • 50 g of fresh parsley, cilantro and dill;
  • 1 chilli pod
  • 10 g salt;
  • 120 ml olive oil;
  • 60 ml balsamic vinegar;
  • 1 onion;
  • 7 cloves of garlic;
  • 20 g mustard seeds;
  • 10 g cumin;
  • ground black pepper to taste.

Preparation:

  1. The beets are washed and wrapped in foil in the peel, baked in the oven at a temperature of + 180 ° C for 40 to 60 minutes, depending on the size of the root crop.
  2. Pepper is washed, freed from seeds and internal partitions and finely chopped with a knife.
  3. They do the same with herbs.
  4. Peel and cut the onion and garlic into thin rings and slices.
  5. In a large container, mix olive oil, balsamic vinegar, salt, ground black pepper, onions, garlic and hot peppers, as well as mustard seeds and cumin.
